回首201*年,在各位领导、同事的支持下,我以身作则,以高标准、严要求,团结同事来严格要求自己。我勤勤恳恳、兢兢业业,为职工送上了可口饭菜,现将一年来的工作总结如下:一、保证饭菜质量:
菜肴质量是食堂得以生存发展的焦点竞争力。作为一名炊事员,我严把质量关。对每道菜都按投料标准及制作程序单来做菜,保证每道菜的色、香、味稳定;还询问并征求员工反馈,并进行总结,在下次饭菜中改进;对于同一菜经常想办法、变花样,尽最大力量让职工尝到新口味。
二、保证饭菜卫生:
根据《食品卫生安全法》规定,抓好食堂的食品卫生安全工作,把好食品加工的各个环节。把食品原料分类存放,厨房器具也存固定位置;厨房、冷冻箱等原料存放地调好适当温度,保证食物新鲜,以确保食品卫生安全,防止职工食物中毒。饭前,将食用的饭菜清洗干净;饭后,对锅碗瓢盆及时洗刷干净,摆放整齐,保证厨房干净卫生。三、减少成本浪费:
在确保菜肴质量的情况下,最大化使用调味品及饭菜等,避免浪费。作为多年工作的炊事员,我也总结出降低成本的新方法。如:库
1存状态,坚决"先进先出"原则,把存货较长的原料尽快用完再用新原料;研究制造无成本菜品,把主菜的剩余原料做成托式菜品,以降低成本,这些不仅能降低食堂费用成本,还能充分利用现有做菜原料,做到最大化利用,避免铺张浪费。
总之,在这辞旧迎新之际,在项目部领导的关心下及同事们的支持下,在201*年度,我在菜品创新、菜肴质量、成本控制、食堂卫生等方面都有了很大的进步都高的成绩。当然工作中还存在很多的不足,比如菜的花样较少。201*年,我会再接再厉、勇于创新,为项目部全体职工带来卫生可口的饭菜而努力!
